  1. Marinade the prawns in the lime juice for at least 30 mins. In a chopper, whizz up tomatoes, pistachios and bread.

Okay I know people get annoyed when you change up a recipe too much but this came out really spectacularly so I thought I'd share. Arrange basil in a single layer in dish; top with fish fillets. Arrange tomatoes and olives over fish. Thinly slice half of the lemon; place over the top. Squeeze juice from remaining lemon over all.
