  10. It's to taste of Salt and seasoning.
  11. It's 1/4 cup of finely chopped Habanero peppers.
  12. You need 1/2 cups of finely chopped Onions.
  13. Prepare 3 of big sized eggs.
  14. You need of Oil for frying.

They can be a little delicate, so a chill in the fridge before frying helps them from falling apart while frying. Chill the mixture in the refrigerator for an hour, this will blend the flavors and solidify mixture to avoid crumbling when frying. The fish cakes were nice and dense and held together nicely. Fish cakes instructions

  1. Allow the potatoes to cool down and then mashe them.
  2. Pieces the fish in medium chunks.
  3. Combine the mashed potatoes, fish, onions, parsley and habanero peppers together.
  4. Add curry powder, salt and seasoning to taste and mix well.
  5. Form a medium shaped paddy.
  6. Mix white pepper, black pepper and salt to the corn flour.

  8. Deep the paddies in the corn flour.
  9. Then dip in the eggs.
  10. After dipping in the eggs coat them in breadcrumbs and shallow fry in oil.
  11. Serve with ketchup or any dressing of your choice.
  12. Add a sprinkle of parsley leaves for garnishing.
  13. Can be taken with teaas breakfast or dinner.
