Salmon fingers. The children love good old fish fingers, so I thought that would be a great place to begin, with home made Norwegian salmon fish fingers. These little salmon goujons are really quick and easy to make. They are oven baked, rather than fried to keep them a little lighter. They were a huge hit here, G&H LOVED the 'pink fish fingers'. These are great to store in the freezer, and are a fantastic finger food for weaning babies too!
I used homemade panko breadcrumbs to create a super crispy coating (you can buy panko if you prefer).

Meanwhile, prepare the honey dill dip. Mix together the mayonnaise, honey and dill then place in a small bowl or ramekin. Serve with a side of mushy peas and wedge of lemon to drizzle over the salmon fingers. Remove from the heat, drain on kitchen paper, sprinkle with sea salt and serve immediately with the green beans, lemon wedges and mayonnaise to dunk the fingers into.

- Cover a baking sheet with aluminum foil and spray with aerosol olive oil..
