- Marinade the salmon fillet and king prawns in the GIN ESQUE with slithers of fresh chilli and a squeeze of fresh lime for at least four hours but preferably overnight..
- Pan fry the fillet of salmon skin side down only until the skin gets crispy,this way it will protect the fillet.Baste with a small knob of butter and a sprinkle of fresh dill..
- Place the salmon into a preheated oven for about 4-6 minutes,I like my salmon cooked well...in the meantime flash fry the prawns with the marinade until cooked..
