Ingredients of Salmon Pesto

  1. Prepare of Grease proof paper approx 35cm X 70cm for each serving.
  2. Prepare of Salt and pepper pinch over each serving.
  3. You need of Trimmed green beans 1 handful per person.
  4. You need of Olive oil drizzle per person.
  5. Prepare of Salmon with skin taken off 1 per person.
  6. Prepare 1 tbsp of Pesto per person.
  7. You need of Baby tomatoes halved approx 8 per person.

Salmon Pesto step by step

  1. Place handful of trimmed beans onto grease proof paper do this for each person add olive oil, salt and pepper.
  2. Place skinless salmon nice side up on top of the green beans.
  3. Use one tablespoon of pesto per portion to cover fish and place halved tomatoes on top and around sides.
  4. Fold grease proof paper over fish and make a parcel and place on baking tray. Cook in oven at 180oC for 20 to 25 mins.
