  3. You need 2 tbsp of Vickys Thai Sweet Chilli Sauce.
  4. Prepare of Juice and zest of 1 lime.
  5. It's 1 tbsp of oil.
  6. It's 300 g of pack stri-fry vegetable mix.
  7. You need 2 tbsp of Vickys Soy-Free Soy Sauce.

Heat oil in wok on medium. Heat oil in large skillet or wok until it is just smoking. Stir in the mushrooms and toss to cook quickly. Toss omelette and chives through to serve.

  2. Mix the teriyaki sauce, sweet chilli sauce, lime zest and juice together.
  3. Add the salmon fillets, turn to coat and let marinate at the side for 15 minutes.
  4. Heat the oil in a large frying pan and fry the salmon fillets for 4 minutes on each side or until slightly blackened (the marinade does this). Set aside.
  5. Add the remaining marinade to the pan and let reduce slightly. Stir-fry the vegetables in another pan with a splash of water and add the soy sauce, cooking for a further 2 - 3 minutes.
  6. Divide the stir-fry vegetables between 4 plates, top each with a salmon fillet and drizzle with the reduced marinade.

Serve over brown rice and you've got your protein, veggies, fruit, and carbs all in one convenient and tasty dish.
