- To create the marinade for the salmon, in a low dish mix together soy sauce and ginger and lay the salmon in skin side up for around 15 minutes.
- Transfer the salmon onto a baking tray and place it skin side down, covering with sesame seeds.
- Place salmon in oven at 180 degrees for around 15 minutes.
- Remove the skin of the butternut squash and then dice. Toss in a little olive oil and salt and pepper and place in the oven for around 40 minutes.
- Place lettuce in a bowl with diced feta and then top with the salmon and butternut squash.
