  1. You need 1 of bagel (i like "everything" bagels for this).
  2. It's 1 oz of lox (smoked salmon).
  3. You need 1 cup of plain cream cheese.
  4. You need 1 of tomato.
  5. You need 1 small of white onion.
  6. It's 1 of brocolli sprouts.
  7. You need 1 can of capers.

Personally, I use the term lox loosely. In a food processor, work the cream cheese until it is smooth, turning off the motor and scraping down the sides of the work bowl several times. Add the scallions, lox, salt and pepper. Continue working the cream cheese mixture until it is blended (by the way, it is okay if there are some chunks of salmon in the mixture).

  1. Slice and toast the bagel.
  2. While the bagel is toasting, slice both the tomato and onion THINLY.
  3. Smear cream cheese on both sides of bagel and spread capers (about 20 - 30) around both slices.
  4. Add the lox, tomato, onion, and brocolli sprouts in that order on the "bottom side" of the bagel so the sprouts sit on top.
  5. Make into a sandwich and enjoy!!!! Slicing helps not to gorge the sandwich.
  6. NOTE: Goes well with a dill pickle - nice fresh crunch in between bites.

Lox, which is commonly often served on bagels with cream cheese, was traditionally made from the belly of the fish. These days, other parts of the fish can be used.
