  1. You need of Enough potatoes for everyone.
  2. You need 200 g of smoked salmon.
  3. You need of Juice of half a lemon.
  4. You need of Olive oil.
  5. It's of Chives.

The addition of smoked salmon really takes this simple potato salad to the next level and makes it suitable as a main dish, perfect for a lunch or a get-together. As a further adaption, I added capers and made a light Creamy Dill Dressing. Place cooked potatoes into a bowl and pour the dressing over them. To assemble salad, on a serving platter place the salad leaves, mint leaves, onion, capers, avocado, potatoes, eggs, broad beans and flaked salmon.

Potato and smoked salmon salad instructions

  1. Boil potatoes until cooked. Leave to cool in a bowl.
  2. Slice the salmon and throw it in. Add a good glug of olive oil and the lemon juice.
  3. Mix well and serve with freshly chopped chives 😁.

While potatoes are cooling down, in a small bowl, combine half and half, yogurt, mustard, lemon juice, and fresh dill. Mix well and keep in the fridge. In a salad bowl, mix potatoes, onion, capers and smoked salmon together. When ready to eat, pour dressing on the salad, and mix well to coat.
