The delicate combination of fresh dill and lemon lend just enough flavor to add interest to plain baked fish. In a small bowl, whisk together butter, lemon juice, lemon zest, garlic, dill, salt and pepper, to taste. Spoon the butter mixture over the salmon. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed.

  1. Chop the dill and mix with the lemon juice, garlic, olive oil and some black pepper.
  2. Smother the salmon with the mix and pour in the remaining liquids. Spoon some mayonnaise on top of the salmon and gently spread.
  3. Cover and leave in the fridge. I left mine for 1 hour.
  4. For the BBQ I cut a strip of foil and brush Olive oil on one side. Place the foil on the bbq and cook the salmon skin side down. I cooked for 5 mins and then turned the salmon on each side cooking for 5 mins on easy side. 20 mins in total. For the last few minutes I covered the salmon and closed bbq. The skin was lovely and crispy and the salmon was nice and succulent:).
